Grains of Paradise

Grains of paradise are small reddish-brown seeds - round to angular with a peppery woody shell. They offer a warm peppery aroma with citrus and cardamom hints. The flavor is piney spicy and floral - milder than black pepper with eucalyptus notes. Use as pepper substitute in rubs marinades stews or baking. Crush before use. Pairs with ginger cinnamon cloves or nutmeg.
