Epazote Crushed

Crushed epazote is the dried leaves of a pungent Mexican herb - dark green to brownish flakes with a rough leafy texture. It has a strong distinctive aroma that's medicinal and minty with hints of citrus oregano and gasoline-like sharpness. The flavor is bold and earthy - slightly bitter camphorous and warming. Traditionally used in beans moles soups quesadillas or corn dishes to aid digestion and add depth. Use sparingly as it can dominate. Pairs with cumin garlic onion chili or cilantro.
