Dill Seed

Whole dill seeds are tiny, flat oval seeds—light to medium brown with darker stripes, around 3-5 mm long, smooth with a slight ridge and crisp texture.

They give off a warm, mildly sweet aroma that's herbaceous and fresh, with gentle caraway-like notes and a hint of dill weed. The flavor is earthy, subtly spicy, mildly pungent, with citrus undertones and a clean herbal finish.

Toast them to enhance the aroma, then use whole in pickling brines, vinegars, broths, or rice; grind into spice blends, dressings, breads, potato dishes, fish, or cabbage recipes. Pairs well with mustard seed, caraway, fennel, garlic, onion, or black pepper.
