These are the dried, unripe fruits of a pepper-family plant—small (about 1/4 inch diameter), dark brown spheres with a wrinkled, bumpy texture and short stems still attached, giving them a distinctive peppercorn-like look but more irregular.
They deliver a hot, pungent kick that's bitter and spicy, blending the warm sweetness of allspice with the sharp bite of black pepper, plus subtle piney, camphorous, and slightly resinous notes that add complexity.
They're great for adding bold heat to spice blends, marinades, rubs, curries, or stews; used whole or cracked in pickling brines, sausages, or gin-style infusions; and historically in medieval European cooking or as a pepper substitute. Pairs well with ginger, cinnamon, cloves, cardamom, or other warm spices for layered, aromatic depth.
